A revered Capsicum baccatum with a history stretching back to the Inca civilisation β "Aji Amarillo" translates simply as "yellow chilli," and it has been cultivated in Peru for thousands of years. Long, slender pods reach 15 cm and ripen from green to a vivid orange-yellow, with crisp, fruity flesh and a bright heat that is assertive without being overwhelming. It is considered one of the cornerstones of Peruvian cuisine, used widely in classic dishes such as causa, aji de gallina, and ceviche, as well as sauces, marinades, and stews.
Vigorous plants reach 1.5 metres and perform well in pots or garden beds in full sun with fertile, well-drained soil. One of the most important and flavourful chillies in South American cooking.
Harvest: Pick when pods are fully orange-yellow for peak sweetness and heat.
Flavour: Crisp and fruity with a rich, sweet capsicum character and lively heat.
