Shiso 'Crimson', also known as perilla, is a striking aromatic annual herb from the mint family widely used in Japanese cuisine for its large, eye-catching leaves with rich red undersides and a distinctive flavour combining mint, basil, clove, and cumin in one unique and complex profile. Larger than standard red and green shiso varieties, the leaves are perfect for salad mixes, sushi wraps, garnishes, and Asian-inspired dishes where both flavour and visual appeal matter. The edible flowers add a further dimension of flavour to salads and Asian dishes.
As beautiful as it is useful, 'Crimson' shiso makes an outstanding ornamental edible, displaying its best leaf colour when grown below 29°C. Seeds require light to germinate and can be slow, benefiting from soaking for 24 hours before surface sowing. A rewarding and characterful herb that thrives in warm conditions and performs well in New Zealand home gardens through the warmer months.
