Ceratonia siliqua
A large evergreen tree native to the Mediterranean, valued for its glossy foliage and long, leathery seed pods filled with sweet, edible pulp. The pods—10 to 25 cm in length—are traditionally used as a chocolate substitute and in natural sweeteners, baking, and snacks. Hardy to around –6 °C, though young trees need protection from frost.
Carob is generally self-fertile and begins producing fruit in 6–8 years from seed. An excellent choice for warm, dry sites, shelterbelts, or coastal gardens.
Growing Instructions
Soak seeds in warm water for 24 hours before sowing. Sow 1–1.5 cm deep in a well-drained seed mix. Maintain temperatures of 20–25 °C. Germination usually takes 2–6 weeks. Stratification is not required. Scarification (nicking or lightly sanding the seed coat) can help improve germination but is not always necessary. Protect seedlings from frost.
