A large evergreen tree native to the Mediterranean. It can withstand temperatures down to -6°C, but protect when young. The fruit is a 4"-10" long pod containing several hard seeds surrounded by sweet, edible pulp. Used as a chocolate substitute and in various foods. Carob trees produce fruit in 6-8 years from seed and are generally self-fertile.
