Culantro – Mexican Coriander
Eryngium foetidum
Known as sawtooth coriander or Mexican coriander, culantro is a bold-flavoured herb widely used in Caribbean, Latin American, and Southeast Asian cuisine. The thick, serrated leaves are packed with intense coriander-like flavour—ideal for soups, stews, curries, and sauces. More heat-tolerant than true coriander, it thrives in warm climates when given some shade and regular water.
Harvest young leaves frequently and pinch off flower stalks to prolong the leafy growth. Can be used fresh or lightly cooked for a rich, herbal depth.
Sow: Surface sow indoors 6–8 weeks before last frost.
Germination: 7–14 days at 21°C; needs light to germinate—do not cover.
Tips: Keep soil moist. Prefers part shade. Protect from frost. Ideal for container growing in warm zones.
