Elephant Garlic - Allium ampeloprasum
A member of the leek family with a mild garlic flavour. It produces very large bulbs made up of 4–6 large cloves and often a few smaller ones. While not a true garlic, it grows in much the same way and is valued for its size and gentle taste.
Plant individual cloves in autumn, in a sunny position with well-draining, fertile soil. Space each clove 15–20 cm apart and 4–5 cm deep, with the pointed end facing up. A layer of mulch helps retain moisture and suppress weeds. Water regularly during active growth, then reduce watering as the leaves begin to yellow and die back in mid to late summer.
Elephant Garlic will form tall flower stalks that can be removed to encourage bulb development or left to bloom for pollinators. Harvest once most of the foliage has died back. Cure the bulbs in a dry, airy spot out of direct sunlight before storing.
Suitable for in-ground planting or large containers. Hardy and low-maintenance once established.
