Oaxaca Red Epazote is a strongly aromatic herb long used in Mexican cooking, particularly to flavour beans and help with digestion. Its bold scent and taste mellow with cooking, adding a unique earthy, resinous note to soups, tamales, huitlacoche, and green salsas for chilaquiles. Traditionally valued for its anti-flatulence properties, it’s an essential herb in many traditional dishes.
This red-leaf variety adds striking colour to the garden and intensifies darker red in cooler weather. Best used cooked rather than raw to temper its pungency, which some liken to turpentine or strong herbs.
Requires cooler weather to develop fully solid red foliage.
Protect from frost during colder months, or grow as an annual in cooler areas.

- Light: Full sun to part shade
- Water: Moderate; water when top layer of soil dries
- Soil: Free-draining soil; avoid waterlogging
- Considerations: Cooler temperatures bring out deeper red hues
