New Zealand Spinach is a heat-tolerant leafy green that thrives through summer when true spinach struggles and bolts, producing fleshy, triangular leaves with a mild, slightly salty flavour. Not a true spinach but an excellent substitute, particularly for cooking where its texture softens beautifully when steamed, sautéed, or blanched.
