New Zealand Spinach (30 seeds)

Heat-tolerant leafy green that thrives in summer when true spinach struggles, with fleshy, triangular leaves and a mild, slightly salty flavour. Not a true spinach but an excellent substitute, especially for cooking. Grows as a sprawling, low-growing plant and can be harvested continuously once established. Best used steamed, sautéed, or blanched to soften the texture. Prefers full sun and well-drained soil. Pinch tips to encourage branching. Sow in late spring through summer. Soak seeds before sowing. Sow 1–2 cm deep, 30 cm apart. Germinates in 7–14 days.
