Oca Red Yam

Oxalis tuberosa

Also known as Oca, a traditional Andean root crop prized for its vibrant red skin, tangy flavour, and versatility in the kitchen. Red yams produce smooth, oblong tubers with firm flesh that becomes sweeter after exposure to light frost. Originally cultivated for centuries in the highlands of South America, oca has adapted well to New Zealand conditions and is ideal for cool-climate gardens.

The tubers are excellent roasted, boiled, or used in salads and can be left in the ground post-maturity in well-drained soils. Flavour improves with frost, making this variety perfect for late-season harvests. Well-suited to home gardens in temperate regions and an excellent addition to any food garden.

Growing Instructions

Plant tubers from late July to mid-October once the soil begins to warm. Choose a sunny position with free-draining soil. Space yams 30–35 cm apart and plant 3–5 cm deep with the growing tip facing upward. Apply a balanced fertiliser below the tubers and cover gently with soil, such as our Potato Fertiliser.

As plants grow, keep the soil consistently moist and weed-free. Mound soil around the base of plants as they develop to encourage tuber formation and protect from light exposure.

Harvest in June or July once the foliage has fully died back. For improved flavour, allow the plants to be exposed to light frosts before lifting. Cure tubers in a dry, shaded, and well-ventilated area before storage. Store in a cool, dark place until ready to use.
