100 Days. A Peruvian Capsicum baccatum producing slender, pendant pods around 9 cm long with thin walls that dry exceptionally well. Aji Colorado Orange is the key ingredient in Salsa de Aji Colorado — a staple of Peruvian cuisine and a step up in heat compared to the milder Salsa de Aji Panca. Fruity with a light sweetness and lively heat, the pods are equally excellent used fresh or dried and ground into powder.

Tall, productive plants reach 1 metre and perform well in full sun with fertile, well-drained soil and consistent moisture throughout the season.

Harvest: Pick when pods are fully orange for peak flavour, or dry whole for powders and sauces.
Flavour: Fruity with a light sweetness and lively heat.
