80 Days. A mildly pungent Capsicum annuum named after Anaheim, California, where it was first widely cultivated in the early 20th century from New Mexican stock. Long, smooth pods reach 15–20 cm and are most commonly harvested green — crisp, fresh, and ideal for stuffing, roasting, and use in Mexican dishes including chiles rellenos and green sauces. When left to ripen red and dried, the Anaheim becomes known as Colorado, developing a rich, smoky depth used in traditional red sauces and decorative ristras.
Plants grow 45–60 cm tall and are reliable and productive in full sun with fertile, well-drained soil. One of the most versatile and widely grown mild chillies available.
Harvest: Pick green for fresh use, or allow to ripen red for drying and sauces.
Flavour: Crisp and fresh with mild heat, deepening to rich and smoky when dried.
