Bhut Jolokia, or Ghost Pepper, is an extremely hot chili from Northeast India, created by crossing Capsicum chinense and Capsicum frutescens. The conical peppers, 6-8 cm long, mature to red or orange. With over 1 million Scoville Heat Units (SHU), it has a fruity, smoky flavor before the intense burn. Handle with care due to its extreme heat.
