Renowned for its edible flower buds, known as capers, which are pickled and used to add a tangy, savoury lift to salads, pasta, sauces, seafood, and Mediterranean dishes. Historically appreciated for their culinary and medicinal uses, capers offer a unique flavour and long cultural heritage.
The plant itself is a low-growing, drought-tolerant perennial native to arid, rocky environments, making it ideal for rock gardens, walls, and sunny, well-drained areas. Once established, it thrives in heat, poor soils, and dry conditions.
Growing Instructions
Cold stratify seeds in the fridge for 4–10 weeks, soak in warm water overnight, then scarify the seed husk lightly with sandpaper. Sow in moist cactus mix and keep warm and evenly moist. A heat pad can help maintain ideal germination temperatures. Gibberellic acid may assist with breaking dormancy.

Caper seeds have deep physiological dormancy and often germinate irregularly, even with cold treatment. A 500 ppm GA₃ soak for 24–48 hours after stratification can help activate the embryo and improve both the speed and reliability of germination—especially useful for stubborn or older seed batches.
