Carrot Yellowstone
Carrot 'Yellowstone' is a striking Imperator-type variety producing long, smooth, lemon-yellow roots with broad shoulders and a classic, full carrot flavour. Reaching around 23 cm in length, it is one of the most versatile and visually distinctive carrots available, equally at home raw on a fresh vegetable platter or cooked in roasts, soups, and sides. The bright yellow colour adds real interest to any dish without compromising on flavour.
A reliable keeper, 'Yellowstone' stores well in the ground and is best planted in late summer for a winter harvest of crisp, flavoursome roots. It performs consistently in New Zealand home gardens when given deep, loose, free-draining soil and steady moisture through the growing season.
