Chervil is a classic French culinary herb producing soft, delicate leaves with a gentle aniseed-parsley flavour that is one of the defining tastes of French cuisine. Used fresh in omelettes, soups, and salads, or to finish delicate spring dishes, it is prized for its subtlety and elegance in the kitchen. An essential component of the classic fines herbes blend and a rewarding herb for gourmet kitchen gardens.
Growing best in cooler, shadier spots where standard herbs can struggle, Chervil prefers moist, fertile soil and bolts quickly in hot or dry conditions. Successive sowings every 2–3 weeks ensure a continuous supply of fresh, tender leaves through the cooler months. Pick leaves young and use fresh for the best flavour.
