Oaxaca Red Epazote is a striking and deeply aromatic leafy herb with a culinary history stretching back to prehispanic Mexico. Its distinctive red-tinged leaves set it apart from the standard green variety, carrying a bold, earthy, and pungent flavour that mellows considerably with gentle cooking. An essential ingredient in traditional Mexican cuisine, it is used to season beans, soups, tamales, huitlacoche, and green salsas, where its flavour is considered irreplaceable.
Well regarded for its digestive properties and traditionally valued for its anti-flatulence effect when cooked with beans, it is a rewarding herb for cooks and growers with an interest in heritage and heirloom culinary plants. Vigorous and easy to grow in a warm, sunny spot, it self-seeds prolifically once established.
Planting Season: Spring, Summer
Sow: Surface sow and press lightly; do not cover as seeds require light to germinate
Spacing: 30–45 cm apart
Height: 60–100 cm
Germination: 7–14 days in warm conditions; keep surface moist and in a bright position
