Verde Epazote

Chenopodium ambrosioides

Verde (Green) Epazote is the classic form of this deeply aromatic Mexican herb, producing bright green serrated leaves with a bold, earthy, and pungent flavour that has made it an essential ingredient in traditional Mexican cuisine for thousands of years. Used to season beans, soups, tamales, huitlacoche, and green salsas, its distinctive flavour is considered irreplaceable in authentic Mexican cooking and mellows considerably with gentle cooking to a complex, savoury depth.

Well regarded for its digestive properties and traditionally valued for its anti-flatulence effect when cooked with beans, it is a rewarding herb for cooks and growers with an interest in heritage and heirloom culinary plants. Vigorous and easy to grow in a warm, sunny spot, it self-seeds prolifically once established.

Planting Season: Spring, Summer
Sow: Surface sow and press lightly; do not cover as seeds require light to germinate
Spacing: 30–45 cm apart
Height: 60–100 cm
Germination: 7–14 days in warm conditions; keep surface moist and in a bright position
Harvest: Pick leaves as needed once plants are established
Flavour: Bold, earthy, and pungent; mellows with cooking
