Epazote is a bold, aromatic herb traditionally used in Mexican cuisine—especially in bean dishes, soups, and tamales. Known for its digestive properties, it has been valued since prehispanic times for its ability to reduce flatulence and enhance the flavour of rich, hearty meals.
This green-leafed variety has a unique, pungent scent that mellows with light cooking. It’s a key herb in traditional recipes including huitlacoche, chilaquiles, and green salsas. Use young leaves for a subtler taste or mature ones for full intensity.
Protect from frost during colder months, or grow as an annual in cooler areas.
