75 Days. A high-yielding Capsicum annuum producing large, thick-walled pods around 10 cm long by 4 cm wide. El Jefe is notable for its heavy corking — the network of scar marks covering the skin that chilli growers prize as a sign of exceptional flavour and heat development. Ideal for stuffing, grilling, or allowing to ripen fully red for the richest flavour and perfect homemade chipotles.

Plants grow 60–80 cm tall and perform well in pots or garden beds in full sun with fertile, well-drained soil. Ground with salt once dried, the smoked pods make an outstanding chipotle seasoning.

Harvest: Pick green for classic jalapeño use, or ripen fully red for chipotles and smoking.
Flavour: Sweet, fruity, and earthy — even better smoked and dried for chipotles.
