Jícama
Jícama is a climbing vine native to Mexico and Central America, producing large, crunchy, sweet, and juicy tubers with a mildly nutty flavour that is refreshing eaten raw or added to salads, slaws, and stir-fries. The vine grows vigorously to 4 m or more with attractive trifoliate leaves and small pale blue or white flowers, requiring a sturdy trellis for support. An unusual and rewarding crop for adventurous home gardeners in warm New Zealand regions.
Tubers develop slowly over a long growing season of five to nine months, so an early start and a warm, sunny position are essential for success. Pruning the vine regularly encourages energy to be directed into tuber development rather than foliage.
Note: only the tuber is edible; all other parts of the plant including seeds, leaves, and skin are poisonous and should not be consumed.
