Red Shallot Bulbs Allium cepa var. aggregatum

Red shallots form clusters of small, elongated bulbs with reddish skin and a sweet, mild onion flavour. Excellent for roasting, pickling, or using raw in salads and dressings. Shallots store well and are a staple in both home gardens and kitchens.

Plant in well-drained soil in full sun. Space bulbs 15 cm apart in rows 20–30 cm apart, with the pointed end facing up. Best planted in early spring or late autumn, depending on climate. Keep soil evenly moist until established.

Harvest once tops begin to yellow and fall over—typically in 90–120 days. Cure in a dry, shaded place before storing.
