Tabasco
Heat: Hot (30,000β50,000 SHU)
90 Days. A classic Capsicum frutescens originating from the Mexican state of Tabasco, and the pepper that made hot sauce history. The iconic McIlhenny Company has been producing Tabasco sauce from this variety since 1868, fermenting the pods with salt and vinegar to create one of the world's most recognised condiments. Slender, upright pods ripen through a vivid progression of green, yellow, orange, and bright red, held proudly above the foliage for a striking ornamental display.
Prolific and highly productive, plants reach 60β90 cm and perform well in pots or garden beds in full sun with fertile, well-drained soil. Outstanding for hot sauces, fermenting, and preserving in vinegar.
Harvest: Pick when pods are fully bright red for peak heat and flavour.
Flavour: Tangy, smoky, and fiery with a bold, vinegar-like sharpness.
